Today we get a peek at a Jester King Censored Pecan Wood Smoked Saison. This appears to be the original Salt Lick collaboration with Salt Lick BBQ but it’s now Censored for what I suspect are TTB-related naming reasons? In any case this beer is a blend of a young dry-hopped ale and an old barrel-aged sour beer fermented with wild yeast. Some of the malt was smoked pecan wood and this beer will be bottle-conditioned in 750ml bottles and come in at 6.7% ABV and 22 IBU.
